With roots going back to ancient times, Crespells are decorated with intricate patterns that evoke Moorish craftsmanship, while Rubiols have their origins in the Middle Ages, when they were symbols of abundance and prosperity during special festivities. The sweet dough and the various fillings, such as jam, angel's hair, ricotta or chocolate, suggest a possible Jewish origin, related to the dried pastries eaten during the Hebrew Passover.

Although Rubiols and Crespells are a typical Easter tradition, we offer you the opportunity to enjoy this delicacy all year round, in any corner of the Balearic archipelago and now also at home. Their versatility makes them the perfect accompaniment for breakfast, an afternoon snack or as an aperitif at any special celebration.

 

The Secret of its Unique Flavour:

The authenticity of Rubiols lies in the choice of local ingredients of the highest quality. We like to follow the traditional recipe, using pastry flour, sugar, oil, orange juice (from Sóller oranges even better), egg yolks and lard to create an exquisitely soft and tasty dough. Each Rubiol is made with care, from kneading to baking, to ensure its delicious flavour and characteristic texture. 

 

Recipe of Rubiols and Crespells de Mallorca:

Get ready to delight your family with authentic Mallorcan Crespells and Rubiols! Follow this simple recipe:

Ingredients:

500 g of flour

2 egg yolks

150 g sugar

150 g lard

75 ml orange juice

75 ml water

75 ml oil

Cinnamon

Lemon zest

Instructions:

Mix the flour, egg yolks, sugar, lard, orange juice, water, oil, cinnamon and lemon zest until you have a homogeneous dough.

Let the dough rest for a few minutes.

Roll out the dough with a rolling pin to the desired thickness.

For the Rubiols: make circles of about 15 or 20 cm, fill them (with chocolate, angel hair, jam, ricotta, etc.) and close them in the shape of a crescent. Bake in the oven until golden brown. 

For the Crespells: cut the dough into shapes of your choice (traditionally, circles, flowers or stars).

Place the crespells on a baking sheet and bake at 180°C for approximately 20 minutes, or until golden brown.

Remove from the oven and leave to cool before serving, decorate with icing sugar if desired and enjoy!
